A current default is not a preference
When you pick a microphone or speaker in System Settings or Control Center, macOS records the current selection — nothing more. It doesn’t know that you’d rather have your USB mic than your webcam mic, or your desk speakers than your monitor. So when devices connect, disconnect, sleep, or reappear after a reboot, the default can land somewhere you never wanted.
A priority order captures what you actually mean: “use the best of these that’s currently available.” That rule keeps working while your desk changes.
What a ranked setup looks like
Input and output are ranked separately. A typical desk:

Connect, disconnect, fallback, restore
